Friday Night Dinner

Today was a busy and hectic day for me.  I was out all day either in a doctors office or running an errand.  I got home at about 4:30 and by 5 o'clock I was getting hungry and not really feeling like make a messy long meal that I would then have to take a while cleaning up after.  I am too tired!  So... I decided to make this sandwich.  I made a Roasted Red Pepper Pesto Ham Sandwich with Mozzarella and I must say that it was de-li-cious.  I think perhaps the name should be shorter. Hmm... I'll have to think of a name for it, if you have any suggestions let me know.

French Roll
Basil Pesto
Mozzarella Cheese
Roasted Red Peppers

Now you grab your piece of bread and of course if it's not sliced down the middle, slice it down the middle. 

Grab your bread and spread some pesto on both sides.  As much or as little as you would like.  You can also spread some mayo before you put pesto on, I go straight for the pesto.  Put some cheese on both sides as well, I chose to use Mozzarella because that's my favorite type but you can use provolone, cheddar or which ever you would like.  Provolone also goes really well in this sandwich but then again you can't go wrong with cheese.  Next you go for the Roasted Red Peppers (so delish and smokey, yum) sometimes they come sliced sometimes they don't, if they are not sliced, slice them and lay them on one side.  Oh, by the way you can roast your own peppers (still good either way).  Now add the ham on the other side, wrap it in aluminum foil, put it on a skillet and toast it till the cheese is melted or till the bread is toasted to your perfection.  You will notice that I am not using a skillet, I am using a COMAL.  It's a Mexican thing or possibly a Latino thing.  I'm not too sure...  It's made out of cast iron I believe and we use it to heat up tortillas, it's very useful.

And Voila you have yourself an amazing sandwich and you can't forget the glass of water

It was so good!  I hope you enjoy this recipe (I guess I'll call it that) and if you try it please let me know your version and if you liked it.  I want to add more recipes so let me know what you think, input is appreciated.  Oh... the pretzels are Pretzel Crisps in Garlic Parmesan flavor and they are a tad bit salty (I wipe some of the salt off) but they are still delicious.
Let me tell you, this was a great beginning to my night.  It really did set me in a better mood.  Now I am ready to enjoy my Friday night.
